Lechon Manok

There are many spit roasted chicken stands such as the one pictured below.  All they sell is chicken, puso and sometimes a pickled shreaded papaya.  Puso is rice cooked in a woven basket of banana leaves then served cold.  The basket constrains how much the rice can expand when cooking.  The result is a dense ball of cold rice, easy to eat by hand.

The heat radiating from the window of these shops is enough to make me want to get the shots and move away to where the heat index is only 96 F and cool off.  I can’t imagine what it’s like working inside.

My most frequent meal here is Lechon Manok, Puso and some Tangerines.
